Secret Recipe Club

You may recall that last month I joined the Secret Recipe Club and I’m back at it again!  This month I was assigned Christie from A Kitchen Hoor’s Adventures.  Christie has a million recipes on her site but the second I saw her Banana Waffles with Peanut Butter Syrup  I knew that was the one.

So these are waffles that taste like banana bread.  YUM.  I may or may not mentioned that one of my kids does not like peanut butter.  Not even in Reeses Peanut Butter Cups.  Its a little distressing to me, but in general he is the best eater of the bunch, always open to trying new foods, so I’ll let him have this.

What do you do when you don’t like peanut butter?  Replace it with Nutella of course, because we all love Nutella!  (Side note, I recall a time when no one knew what Nutella was – how did we survive?)

Christie’s blog focusing on eating light, and while that is probably something I should also focus on, I rarely do.  I just really love butter.  So I made a few minor adjustments, not to be fattening for the heck of it, but to use some of the ingredients that I already had on hand, like low fat greek yogurt in place of fat free, you get the idea.

These were a big hit with the kids of course.  I was also thinking of adding a scoop of ice cream and some strawberries on top and calling them banana split waffle sundaes.  I may do that next time!

Banana Waffles with Nutella Syrup


  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large bananas, mashed
  • 1 1/2 cups low fat buttermilk
  • 1 egg
  • 1/4 cup greek yogurt
  • 2 tablespoons sugar
  • 2 large egg whites
  • butter for cooking
  • 1/2 cup maple syrup
  • 1/2 cup nutella


  1. Preheat a waffle iron.
  2. In a large mixing bowl, mix the bananas, buttermilk, egg, yogurt and sugar until well combined.
  3. In a second mixing bowl, whisk together the flours, baking powder, baking soda, salt and cinnamon.
  4. In a medium mixing bowl, whip the egg whites with a whisk or blender until stiff peaks form.
  5. Add the flour mixture to the banana mixture and mix with a wooden spoon until just combined.
  6. Add the egg whites to the batter and very gently fold them into the batter
  7. Lightly coat with the waffle iron with butter. Pour enough batter onto each well of the waffle iron to just fill. Close and cook until your iron beeps or the waffles are golden brown.
  8. Combine maple syrup and nutella in a microwave safe bowl and heat on high 30 seconds.
  9. Stir well and serve waffles topped with the syrup.
