I am a big fan of making a meal that I can use for leftovers the next night. Lets face it though, unless its the day after Thanksgiving, no one is super excited about leftovers. I like to change up my leftovers into a different look and feel to keep my work load down and pleasing those picky little eaters of mine. Making a Chicken Parmesan Hero is as simple as taking leftover chicken cutlets topped with sauce and cheese and serving it on warm crusty bread. Fast and easy but it makes the meal a little more exciting.
I like to reheat chicken cutlets in the oven, using a rimmed baking sheet. After the chicken is heated through I add sauce and cheese – or just cheese – the sandwiches tend to be made to order to appease all. Sometimes I will make one with grilled chicken pieces, sliced tomatoes, basil and fresh mozzarella for myself. You can do the same with leftover meatballs, sausages or sliced beef. My favorite sauce to use is Tomato, Butter and Onion, I keep some in the freezer to tops sandwiches and use for pizza sauce.
So simple its not really a recipe, just a plan for turning your leftovers into a whole new meal. It amazes me how excited the kids get when they hear they are getting heroes for dinner.
