I love these cute little Ghost Brownie Sandwiches but I’ve gotta be honest with you…

….I’m not totally in love with Halloween.

I’ve definitely got my eye on the Thanksgiving and Christmas decorations going up in the stores.  Can you blame me?  The last couple of Halloween’s have been…cancelled.  Literally, my kids haven’t had a parade (or school for that matter) for 2 years now and the trick or treating has been either shortened or down right cancelled.  So, I’m a little hesitant to get all “Halloweeny” when we still have unworn costumes from last year and I am anticipating the prediction of a catastrophic storm at any moment now.

In anticipation of a potentially crippling storm we had a little pumpkin carving night and watched “It’s The Great Pumpkin Charlie Brown” while enjoying these ghost brownie and fluff sandwiches and popcorn.  A little pre-Halloween party just in case the real one gets cancelled.

Brownie Half SheetIt took a bit of trial and error to get the process for these brownie sandwiches down.  Brownies can be crumbly and fluff drippy, but I worked out the kinks and its pretty easy to make these.  I bake them in a rimmed half sheet pan* lined with two pieces of parchment paper so you can easily cut the batch in half or you could also bake them in two equal size plans.

Ghoulish Brownie and Fluff Sandwiches



  1. Heat oven to 350.
  2. Prepare brownie mix with vegetable oil, water and eggs according to box.
  3. Spray nonstick spray on a half sheet rimmed baking pan and line with 2 equally sized pieces of parchment paper, overlapping about 1/4 inch.
  4. Spread brownie batter evenly over the parchment paper to cover the pan. Bake for 15-17 minutes, when toothpick comes out clean.
  5. Immediately slice the brownies in half, along the seam where the parchment paper meets.
  6. Holding the edges of the parchment paper, remove one side from the baking sheet and set on a heat resistant cutting surface.
  7. Cut the removed half of the brownies in approximately 2 1/2 inch squares or large enough to leave 1/4 inch along the edge around the cookie cutter. Cut a ghost inside each of the squares, removing center. Let cool completely.
  8. Spread uncut brownies with fluff. Place cut brownies on the fluff and cut through the bottom layer.
  9. Decorate with candy eyes and an upside down mini chocolate chip for the mouth.
