I’m feeling pretty tired, the first week of school always kicks my butt. Monday morning I had promised the kids pancakes for breakfast before sending them off on the first day. I cooked them in four different batches since they were all getting up and leaving at different times. The only thing that made it tolerable was the that I had mixed up a Pancake Mix and had the other ingredients measured and organized in the fridge for the morning.
I’m a morning-ish person, but more like 7:30 morning kind of person, not 6 AM. I managed to get everyone fed and on to their buses/dropped at preschool on time with hair braided, teeth brushed and pictures taken. We can assume that will be the only time this year.
So pancakes, I love em, the kids love them but I am lazy in the morning. I just want to drink coffee and chill out, but the kids are always looking for a big breakfast of pancakes, waffles, etc. Not the frozen kind, or even the Bisquick kind now that they’ve been spoiled with the real thing. Hence the beauty of homemade pancake mix. Super fast and easy to mix up and stores up to 3 months. It requires a little more work that the “just add water” pancakes but the taste is vastly better and I think worth the extra 2 minutes if your time if you are going the pancake over cereal route.
Perhaps your kids morning drop off times are not spread from 7 AM to 9 AM like mine are and your making them pancakes before school any old day. My kids will not be getting made to order pancakes before school each day but this is also great to have on hand for the weekends and birthday breakfasts or the unexpected snow day later in the year.
