This is the second Lunch Box post for back to school and its all about packing up leftovers for yummy school lunches. My kids expect a hot lunch most days and get all huffy when presented with a ham and cheese or peanut butter and nutella sandwich for lunch. While they will eat the sandwich if they are hungry enough, I’ve found quite a few barely touched brought home from school at the end of the day. That can be annoying! Not only is it a big waste, but they must be starving right?
Not every meal will pack well, but here are a few that I’ve found work well. They may not be “HOT” by the time your kid eats lunch but I find they can still be warm if you try and separate the hot and cold items in the lunch box with a cloth napkin, using a thermos, etc.
Tacos – My kids are taco crazy and one morning when I was out of pretty much any sort of lunch food I used our leftovers to back a bean and beef burrito for one of the boys and he was in heaven. On a flour tortilla, spread refried beans, top with leftover taco meat. Microwave until the meat and beans are very hot (much hotter than you would want to eat right away). Add cheese and microwave for another 20 seconds or until cheese is melted. Roll the tortilla up like a burrito, folding the top and bottom in. Slice in half, place two pieces side by side on a piece of foil and wrap well. Place in a thermos if you can fit it, or double wrap in foil before packing. Include any condiments your child likes such as shredded lettuce, tomatoes, salsa and sour cream.
Pasta – Ask my kids what they want for dinner and 9 times out of 10 it will be pasta. I think pink and tomato sauces or plain butter sauce pack best. Before adding the pasta leftovers to a thermos, fill it with boiling water and replace the lid. Let it sit for 5 minutes, then empty and add pasta. Include extra sauce on top if you have it to keep the pasta from drying out.
- Meatballs or sausage slices with slices of baguette and shredded mozzarella to make mini sandwiches
- Thin sliced roast beef or pot roast with bread slices and cheese
- Rice and beans
- Mini Pancakes or waffle slices with fruit and maple syrup for dipping
