This weekend we had our families over to celebrate our daughter’s 5th birthday. Her birthday is still over a week away but with everyone’s hectic schedules this was the best day for everyone. You may recall from an earlier post that her “kids” birthday party took place a few weeks ago…longest birthday celebration ever! Lucy’s favorite meal is spaghetti and meatballs, when we go out to dinner that is her usual order, so of course that was what she wanted served for her party. Fine with me, its the perfect make ahead meal that actually improves on the second day. Meaning, I made them on Friday, so on Saturday when we were at the soccer and football fields for 4 hours, I was not stressing about all the food I needed to be making because it was simmering in the slow cooker already.
There are so many recipes for meatballs out there, this one is based on my mother-in-law’s recipe, the one she gave me in the wishing well at my wedding shower. I don’t even have the recipe card anymore because I used it so much those first couple of years that it got wet and meaty and became unreadable. Luckily I found the way that worked best for me and no longer needed the card. I had about 20 adults and a dozen kids, so I made a double recipe and it produced about 60 meatballs. Also, watch the salt, the cheese is salty too, you don’t want to add to much.
