Meat on a stick is usually a good way to entice my children to eat. I often over look this option but it came to me suddenly when trying to decide what to make that would appease both the kids and myself (oh and the husband). Kebobs was of course the answer, duh! Pork Kebobs to be specific because I had a giant club size package of pork tenderloin in the freezer.
I was also very excited to try out the Mediterranean Seasoning Blend that Gourmet Gardens* had sent me, Basil, Oregano, Garlic and Bell Pepper sounded right up my alley. I was correct, the seasonings were my perfect blend and it made the quickest marinade ever. Top that with quick cooking bite size pieces of meat on a stick and we have a winner. (I cooked this on the grill but yes Allison you can make this on your grill pan!) If you’re not into pork I think beef or chicken would also work great.
Being mid-August I had a large amount of corn, zucchini and tomato on hand, which became the perfect side dish. What is even more perfect is that while my kids are so not going to dive into zucchini and tomato, I could easily cook up half the corn, set it aside and then continue on cooking the remaining corn with the veggies and seasonings that I want to eat. I love it when I don’t have to get another pan dirty.
So what was the actual response to these kebobs? I LOVE THIS (1), Its pretty good (2), tolerated it (1). The husband and I both loved it, so putting it into the weeknight rotation.
